Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 2 cups spinach
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion, carrots, and celery. Sauté until softened.
  3. Add the minced garlic, cumin, paprika, and thyme. Cook for another minute.
  4. Stir in the lentils, vegetable broth, and diced tomatoes. Bring to a boil.
  5. Reduce the heat and simmer for about 30 minutes, or until the lentils are tender.
  6. Add the spinach and cook until wilted. Season with salt and black pepper.
  7. Serve hot.
