- 1 cup lentils
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon thyme
- 6 cups vegetable broth
- 1 can diced tomatoes
- 2 cups spinach
- Salt to taste
- Black pepper to taste
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion, carrots, and celery. Sauté until softened.
- Add the minced garlic, cumin, paprika, and thyme. Cook for another minute.
- Stir in the lentils, vegetable broth, and diced tomatoes. Bring to a boil.
