- 1 cup unsweetened shredded coconut
- 1 cup buttermilk
- 1/2 cup unsalted butter, softened
- 4 large eggs
- 1 tablespoon vanilla extract
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- Preheat your oven to 350°F (175°C).
