  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream

Instructions

  1. Preheat your oven to 325°F (162°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter.
  3. Press this mixture into the bottom of a greased 9-inch springform pan.
  4. In a large bowl, beat the cream cheese until smooth.
  5. Add sugar and vanilla extract, and mix until well combined.
  6. Add eggs one at a time, mixing well after each addition.
  7. Stir in sour cream until smooth.
  8. Pour the mixture over the crust in the springform pan.
  9. Bake for 60 minutes, or until the edges are set and the center is slightly jiggly.
  10. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar.
  11. Refrigerate for a minimum of 4 hours, preferably overnight.
