- 4 pounds beef chuck roast
- 2 cups fresh cranberries
- 1 cup balsamic vinegar
- 1 cup beef broth
- 1 onion, diced
- 4 cloves garlic, minced
- 2 tablespoons brown sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh rosemary, chopped
- Preheat your oven to 325°F (160°C).
- Season the beef roast with salt and pepper. In a large, oven-safe pot, sear the roast on all sides over medium-high heat until browned.
- Remove the roast and set it aside. In the same pot, add onions and garlic, sauté until translucent.
- Add cranberries, balsamic vinegar, beef broth, brown sugar, and rosemary. Stir to combine.
- Return the roast to the pot, cover, and place in the oven. Bake for 3-4 hours, or until the meat is tender.
- Once done, remove from the oven and let it rest before slicing.
