  • 4 pounds beef chuck roast
  • 2 cups fresh cranberries
  • 1 cup balsamic vinegar
  • 1 cup beef broth
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh rosemary, chopped

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Season the beef roast with salt and pepper. In a large, oven-safe pot, sear the roast on all sides over medium-high heat until browned.
  3. Remove the roast and set it aside. In the same pot, add onions and garlic, sauté until translucent.
  4. Add cranberries, balsamic vinegar, beef broth, brown sugar, and rosemary. Stir to combine.
  5. Return the roast to the pot, cover, and place in the oven. Bake for 3-4 hours, or until the meat is tender.
  6. Once done, remove from the oven and let it rest before slicing.

Notes

  • For a deeper flavor, marinate the beef roast overnight in balsamic vinegar.
  • Feel free to add vegetables like carrots and potatoes to the braise.
