An easy and delightful cake filled with raspberry surprise and coated in coconut.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 1 cup raspberry preserves
  • 2 cups shredded coconut
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Stir in the milk and vanilla extract.
  5. Gradually add the flour and baking powder, mixing until well combined.
  6. Pour half of the batter into a greased cake pan.
  7. Spread raspberry preserves over the batter.
  8. Pour the remaining batter on top.
  9. Bake for 30-35 minutes or until a toothpick comes out clean.
  10. Let cool before covering with shredded coconut.

Notes

  • For best results, use fresh raspberries if available.
  • Store cake in an airtight container to keep it moist.
