  • 1 cup pistachios, finely ground
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 1/2 cup crushed pistachios for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, ground pistachios, baking powder, baking soda, and salt.
  3. In another large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in vanilla extract and mascarpone cheese.
  5. Gradually mix in the dry ingredients until just combined.
  6. Divide the batter evenly between the prepared pans and smooth the tops.
  7. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack.
  9. For the frosting, whip heavy cream and powdered sugar until stiff peaks form.
  10. Layer the cakes with whipped cream and top with crushed pistachios.

Notes

  • For a more intense pistachio flavor, add a few drops of pistachio extract.
  • This cake can be made a day in advance and chilled overnight.
