  • 1 cup crushed graham crackers
  • 1/4 cup unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup dragon fruit puree
  • 1 cup whipped cream
  • 1/4 cup fresh dragon fruit chunks for topping

Instructions

  1. In a bowl, mix together the crushed graham crackers and melted butter until combined.
  2. Press the mixture into the bottom of mini cheesecake molds or muffin tins to form the crust.
  3. In another bowl, beat the cream cheese and sugar until smooth.
  4. Add in vanilla extract and dragon fruit puree, mixing well.
  5. Fold in the whipped cream gently until fully combined.
  6. Pour the cheesecake mixture over the crust and smooth the top.
  7. Refrigerate for at least 4 hours or until set.
  8. Remove from molds and top with fresh dragon fruit chunks before serving.

Notes

  • For a more intense flavor, use fresh dragon fruit instead of puree.
  • These can be made a day in advance for convenience.
