Ingredients

  • 200 grams unsalted butter
  • 200 grams caster sugar
  • 4 large eggs
  • 200 grams self-raising flour
  • 2 teaspoons baking powder
  • 2 tablespoons milk
  • jam for filling
  • double cream for whipping

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Grease and line two 20cm (8-inch) round cake tins.
  3. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Sift in the flour and baking powder, and gently fold into the mixture.
  6. Add the milk to achieve a soft consistency.
  7. Divide the batter evenly between the prepared tins.
  8. Bake for 25-30 minutes or until golden brown.
  9. Allow the cakes to cool in the tins for 10 minutes before transferring to a wire rack.
  10. Once cooled, spread the jam on top of one layer, add whipped cream, then place the second layer on top.

Notes

  • For extra flavor, add a splash of vanilla extract to the batter.
  • Dust the top with icing sugar for a beautiful finish.
