- 200 grams unsalted butter
- 200 grams caster sugar
- 4 large eggs
- 200 grams self-raising flour
- 2 teaspoons baking powder
- 2 tablespoons milk

- Preheat your oven to 180°C (350°F).
- Grease and line two 20cm (8-inch) round cake tins.
- In a mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Sift in the flour and baking powder, and gently fold into the mixture.
- Add the milk to achieve a soft consistency.
- Divide the batter evenly between the prepared tins.
- Bake for 25-30 minutes or until golden brown.
- Allow the cakes to cool in the tins for 10 minutes before transferring to a wire rack.
- Once cooled, spread the jam on top of one layer, add whipped cream, then place the second layer on top.
Notes
- For extra flavor, add a splash of vanilla extract to the batter.
- Dust the top with icing sugar for a beautiful finish.
