- 1 ½ cups crushed graham crackers
- ½ cup unsweetened cocoa powder
- ½ cup granulated sugar
- 1/2 cup unsalted butter, melted
- 4 (8 ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 1 cup crushed peppermint candies
- 8 ounces chocolate, chopped
- ½ cup heavy cream
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the graham cracker crumbs, cocoa powder, sugar, and melted butter until combined.
- Press the mixture into the bottom of a springform pan.
- In a separate bowl, beat the cream cheese until smooth. Gradually add sugar, followed by eggs, vanilla, and sour cream.
- Mix in crushed peppermint candies.
- Pour the cheesecake batter over the crust.
- Bake for 55-60 minutes until the center is set. Let it cool.
- To make the chocolate ganache, heat the cream and pour it over the chopped chocolate. Stir until smooth.
- Pour the ganache over the cooled cheesecake and refrigerate.
- Decorate with additional peppermint candies before serving.
