Enjoy a quick and delicious dinner with these easy weeknight meatball subs topped with turkey bacon and perfect beef meatballs.

Ingredients

  • 1 pound ground beef
  • 4 slices turkey bacon
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 jar marinara sauce
  • 4 sub rolls
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together the ground beef, breadcrumbs, grated Parmesan, egg, minced garlic, Italian seasoning, and diced turkey bacon until well combined.
  3. Shape the mixture into meatballs and place them on a baking sheet.
  4. Bake the meatballs for 20 minutes, or until cooked through.
  5. In a saucepan, heat the marinara sauce over medium heat.
  6. Once the meatballs are cooked, add them to the sauce and simmer for a few minutes.
  7. Toast the sub rolls in the oven for 5 minutes.
  8. Assemble the subs by placing meatballs in the rolls, topping with shredded mozzarella cheese.
  9. Return to the oven for about 5 minutes or until the cheese is melted.
  10. Serve warm and enjoy!

Notes

  • For extra flavor, add herbs to the marinara sauce.
  • These subs can be made ahead and reheated.
