  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tablespoon ginger grated
  • 2 tablespoons red curry paste
  • 4 cups vegetable broth
  • 1 can (14 oz) coconut milk
  • 2 cups dumplings
  • 1 cup baby spinach
  • 1 tablespoon lime juice
  • 2 teaspoons soy sauce
  • 1 tablespoon fresh cilantro chopped

Instructions

  1. In a large pot, heat coconut oil over medium heat.
  2. Add onions and sauté until translucent.
  3. Stir in garlic and ginger, cooking for another minute.
  4. Add red curry paste and cook for 2 minutes.
  5. Pour in vegetable broth and coconut milk, bringing it to a simmer.
  6. Add dumplings and cook according to package instructions.
  7. Stir in spinach, lime juice, and soy sauce just before serving.
  8. Garnish with fresh cilantro.
