A delicious and easy to make Cranberry Orange Bundt Cake, perfect for the holidays.

  • 2 cups all-purpose flour
  • 1 cup fresh cranberries
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1/2 cup orange juice
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tbsp grated orange zest

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a bundt pan.
  2. In a bowl, cream the butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in orange juice and vanilla extract.
  5. In another bowl, combine flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Fold in cranberries and orange zest.
  8. Pour the batter into the prepared bundt pan and smooth the top.
  9. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  10. Allow to cool in the pan for 10 minutes before inverting onto a wire rack.

Notes

  • Serve plain or with a dusting of powdered sugar.
  • This cake can also be glazed with orange glaze for added sweetness.
