A delightful holiday dessert combining tart cranberries with a sweet sugar cookie streusel topping.

  • 2 cups fresh cranberries
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, cream together the butter and granulated sugar.
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently.
  6. Fold in the cranberries, then spread the batter into the prepared pan.
  7. In a separate bowl, mix the powdered sugar with a little flour and sprinkle over the top.
  8. Bake for 35-40 minutes, until a toothpick inserted comes out clean.
  9. Allow to cool before cutting into squares and serving.

Notes

  • For extra flavor, add a teaspoon of cinnamon to the batter.
  • Serve with whipped cream for an indulgent treat.
