  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 cups frozen mixed vegetables
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup all-purpose flour

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add turkey bacon and cook until crispy. Remove and chop.
  3. In the same pot, add onion, carrots, and celery; sauté until soft.
  4. Add garlic and cook for 1 minute.
  5. Stir in the flour and cook for another 2 minutes.
  6. Add chicken broth gradually while stirring to prevent lumps.
  7. Once combined, add chicken, mixed vegetables, thyme, salt, and pepper.
  8. Bring to a simmer, then stir in heavy cream.
  9. Cook for another 5-10 minutes until thickened.
  10. Top with chopped bacon before serving.

Notes

  • For a thicker soup, add more flour.
  • Feel free to use any leftover cooked chicken.
