1 loaf brioche bread
2 cups fresh blueberries
3 large eggs
2 cups milk
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 teaspoon lemon zest
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
Instructions
Grease a 9×13 inch baking dish.
Cut the brioche bread into cubes and place half in the greased dish.
Sprinkle half of the blueberries on top of the bread cubes.
In a bowl, whisk together the eggs, milk, sugar, vanilla extract, lemon zest, salt, and cinnamon.
Pour the egg mixture over the bread and blueberries, adding the remaining bread and blueberries on top.
Cover and refrigerate overnight.
The next morning, preheat the oven to 350°F (175°C).
Bake uncovered for 40-45 minutes, until golden brown and set.
Let cool slightly before serving.
Notes
This casserole can be assembled the night before for an easy breakfast.
Substituting other berries can add different flavors.
