  • 1 cup turkey bacon, diced
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream

  • 1/2 teaspoon black pepper
  • 2 tablespoons chives, chopped

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, melt the butter and sauté the onion and garlic until translucent.
  3. Add diced potatoes and chicken broth. Bring to a boil and then simmer until potatoes are tender.
  4. Using an immersion blender, blend the soup until smooth.
  5. Stir in the heavy cream, salt, and black pepper. Adjust seasoning as necessary.
  6. Serve hot, garnished with crispy turkey bacon and chives.
